Craisin Biscuits

These are some of the best biscuits that we have ever had. They are sweet and salty. Love them for breakfast, snack or dessert. They remind me of an English Scone. (Sorry no pictures yet)


1 3/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 Tbs. sugar
8 Tbs. unsalted butter, cubed, chilled
1/2 c. dried cranberries
1/2 c. white chocolate chips  
3/4 c. buttermilk (if you don't have any on hand make your own by adding 1Tbs. vinegar to a little less then                               3/4 c. milk. Let it curdle a bit and your ready to go)  
2 Tbs. icing sugar (powdered sugar--the cookbook is Canadian :)                                     

 Pre-heat oven to 400* Add butter to dry ingredients. Combine with a fork or pastry knife. Add white chocolate chips and cranberries. Put in mixer. Add 2/3 cup buttermilk; mix until it pulls away, 1 big ball. Pat into flat circle. Use a glass to cut our circles. Line pan with wax or parchment paper. Brush buttermilk on top. Sprinkle icing sugar on the biscuit rounds. Bake for 15-20 minutes.
